Fenugreek is considered the oldest known medicinal plant in human history. It was traditionally used for the treatment of diabetes and also has been utilized as a galactogogue (lactation inducer for breastfeeding). Other folk medicine uses include taking fenugreek for breathing congestion and making a poultice from the herb for reducing inflammations. The herb has been used as a tonic to strengthen the body for those with physical debilitation, to relieve menstrual irregularities, and to reduce inflammation of swollen glands.

Fenugreek, in these days, are primarily used in commercial flavouring more than as a culinary herb in the kitchen. The seed itself has a strong, somewhat bitter flavour that is unpleasant to some. These strong taste is also reflected in the CO2 extracted oil of fenugreek, which is of a moderate herbaceous-pungent scent due to 0.24% of its essential oil captured during the CO2 extraction.

Fenugreek CO2 extracted oil contains a whooping 3.790% unsaponifiable matter, and that includes tocopherols, sterols, triterpenic alcohols, hydrocarbons, and aliphatic alcohols. These physicochemical characteristics demonstrated that the CO2 extracted oil is an excellent candidate for use as a functional edible oil too.

Did you know?
22kg of fenugreek seeds are used to extract 1kg of fenugreek CO2 extract. Fenugreek seed is a good source of essential amino acids, especially leucine, lysine, and total aromatic amino acids. Recently, researchers have found that the seed contains 20%–25% protein, 6%–8% oil, 45%–50% dietary fiber, and 2%–5% steroidal saponin.

Herbal Folk Tradition

Cultivated since the time of the Ancient Assyrian, and found in the tomb of Tutankhamen, fenugreek seeds are an ancient herb that is native to Southern Europe and Western Asia.

The ancient Egyptians made an incense, kyphi, with fenugreek leaves as a key ingredient for ceremonies associated with fumigation and embalming rites.

Dioscorides, the Greek physician, wrote that fenugreek was an active component in his ointments. He recommended it for women’s problems.

Fenugreek are widely used in India for flavouring soups and curries.

In cultures of North Africa, the grounded seeds are used to stretch flour. In other parts of Africa, the seeds have been used to balance blood sugar; for digestion, coughs, muscle and joint aches; and as a general tonic.

In the Middle East, the seeds are taken for fevers, bone fractures, blood sugar imbalances, and heart-lung problems. The fresh leaves are added to stews and the seeds to flavor foods.
